Flour-less Peanut Butter and Chocolate Chip Cookies

We are in the middle of a snow storm here in New England and we might get up to 24 inches of snow or more. I'm enjoying it being stuck inside. I finally had the time to bake something new. 

I found this recipe through Pinterest from this blog call Eat In Eat Out

I like that its flour-less and very little ingredients and that I had all of them on hand.

They are also so very yummy. I only wish I had enough peanut butter to double it. 

What you need

1 cup peanut butter
3/4 cup sugar
1 large egg
1/2 tsp baking soda
1/2 tsp salt
3/4 cup semi-sweet chocolate chips
1/2 cup roasted salted peanuts

I didn't add the peanuts and felt it was just as good with out them. 


1. Preheat oven to 350ºF. Line baking sheets with parchment. In a small bowl, beat peanut butter, sugar, egg, baking soda and salt.
Mix in chocolate chips and peanuts.
2. Roll dough into balls by tablespoons. Place on baking sheets about 2 inches apart.
3. Bake, rotating sheets halfway through, until golden and puffed, 14 to 17 minutes. Let cool 5 minutes, then transfer to cooling rack to cool completely. Makes 24 cookies.

I also did not have to rotate them since I have a convection oven.

You will want to eat these all in one day.
